Rustic Chicken Mediterranean Flat Bread

If you were to ask Jonah at any given point during the day what he would like to eat, it's most likely pizza! It's not a terrible thing to serve him, as it is an easy way to sneak in the veggies and meat in a way that he doesn't realize. He asked for pizza for dinner tonight, but instead of his regular tomato sauce pizza, I'm going to experiment and give him something a little different.

It was a huge hit. He didn't even ask what the artichoke on top of it was, he ate it in delight.

Kyle pulled out some Franks hot sauce and added a tiny bit to the top, and I did the same. It was awesome. I suppose I could have brought the heat with more spicy eggplant. Next time I will!


Ingredients

(These are very loose measurements. Use as per your personal taste)

1 store bought flat bread
1/4 cup of Kalamata olives
1/4 cup of water
2 tablespoons of olive oil
2 cloves of minced garlic
Fresh ParmesanSpicy Eggplant (5-10 pieces chopped roughly)
1/3 cup of grated mozzarella
1/4 cup of artichoke hearts (chopped roughly)
2 shallots diced finely
Salt and Pepper
1 chicken breast

Preheat oven to 400 degrees.

Place the olive oil an a microwavable dish and heat for 30 seconds on high. Add the minced garlic to it and set it aside until ready to use.

Preheat a frying pan to medium heat with about 1/4 cup of water.
Season chicken with salt and pepper and saute in frying pan until water has evaporated and the chicken has cooked through.

Take the shallots and throw them into the pan you cooked the chicken in, and with a spoon add about 1/4 teaspoon of the oil from the spicy artichoke jar to the pan. Saute until the shallots begin to brown.

With a BBQ brush or pastry brush, paint the garlic infused olive oil onto the flat bread.
Layer the olives, and artichoke heart on top of the flat bread.

Remove the shallots from the pan and place them on top of the flat bread. Finally, top with cheeses and bake at 400 for 10 minutes. Turn to broil, and broil for 3 minutes.

Wait a few minutes before taking a bite, it's hot!
