Chocolate Oatmeal Chickpea Cookies

These cookies are actually a huge hit in my house. I have been making them for my 3 year old since he was about a year and a half. I used to have a lot of trouble getting him to eat meat and I was constantly worried about his protein intake. I came across a recipe from Jessica Seinfeld's Deceptively Delicious which takes chickpeas and transforms them into chocolate chip cookies. I tell you that I have fooled many people with this recipe including my husband. This recipe is inspired by her recipe, I highly recommend her book if you have picky toddlers. It's not every day that they get to eat a cookie so healthy that it's perfectly fine to give it to them for breakfast! Even myself, about two of these cookies are only 6 weight watcher points. They go perfectly with my morning coffee.




Chocolate Oatmeal Chickpea Cookies
Makes about 24 cookies

1/2 cup old fashioned oats
1 ounce of semi sweet chocolate (grated)
3/4 cup brown sugar
1/3 cup light butter
1/3 cup unsweetened applesauce
1 egg white
1 egg
2 teaspoons vanilla extract
1 can chickpeas, drained and rinsed
1 cup chocolate chips
2 cups whole wheat flour
1 teaspoon baking soda
1/4 cup coconut flakes
1/4 teaspoon salt
1/4 teaspoon baking powder

Directions:

Preheat oven to 350 degrees. Coat a cookie sheet with baking spray.
Beat sugar, egg & white, applesauce, vanilla and butter until smooth.
Using an immersion hand blender, quickly mush up the chickpeas. Add the chickpeas to the wet mixture, and continue to beat until well combined (will still be chunky). Using a wooden spoon fold the dry ingredients into the wet mixture until combined.

Drop by spoon full (I used an ice cream scoop) onto a parchment lined baking sheet and bake for 12 minutes.
