Blueberry Lemon Pie

http://www.flickr.com/photos/mairag/6419364999/We're having a dear friend (who is practically my fourth sister) over for dinner tomorrow night, and she is going through a hard time. So Jonah and I put our noggins together to think up a good way to cheer her up. Jonah suggested a blueberry pie in the shape of a train. I talked him down to a normal shaped blueberry pie. But mark my words, I will make it my mission this year to bake a train shaped blueberry something-or-other. Perhaps for his birthday in September... Anyways, the pie is baking in the oven as I write this, and it smells amazing.

Ingredients

1 Batch of Nanas Pie Dough
2 pints of fresh blueberries (Rinsed)
1/2 cup of brown sugar
Juice from 2 lemons
1 teaspoon of cinnamon
1 teaspoon of Stevia (Natural Sweetener)
1 teaspoon of corn starch

Preheat oven to 425 degrees.
Roll out dough and line pie plate with dough, (I used a glass dish). In a bowl, mix the berries with the brown sugar, stevia, lemon juice, cinnamon, and cornstarch. Stir until berries are coated.

Pour berries into pie shell, and cover pie with dough. Poke holes with a fork in the top to allow steam to vent. Bake at 425 degrees for 15 minutes. Turn oven down to 350 degrees and continue baking for 35 minutes. Remove from oven and let sit undisturbed for at least 20 minutes.
