Bacon, Apple and Cheddar Quesadillas

I remember when I first went back to work after having Jonah. We was only 10 months old when I had to make the decision to put him in day care. It was a big transition for all of us but eventually he grew to love his caregivers. Jonah refused to eat meat. Period. He wouldn't touch meat in any form or any variety. I had serious anxiety about his nutrition and if he was getting all his nutrients and vitamins. Kyle and I had to resort to making him a fruit smoothie, and pureeing chicken or turkey into it. We would trick him, and he would drink his meat through a straw. So you can imagine the shock on my face, when he came home from daycare one day proudly announcing that he loves " Quesadillas ". I was absolutely thrilled as it suddenly opened a new door for me to introduce meat into his diet. So from that day on, my adventures with flat breads and the tortilla began. This is our favorite one!
Ingredients 


(1 Quesadilla is 9 Weight Watcher Points)

2 Whole Wheat Tortillas (I use Blue Menu)
30 grams of shredded sharp cheddar
1 Apple cored and thinly sliced
2 slices of bacon, cooked crisp and crumbled

Preheat your over to 350 degrees.

Place the tortillas open on a flat surface and lay the apple on one side of it.

Layer the cheese and crumbled bacon on top and fold to create a half moon.

Spray a quick mist of olive oil on top of moons, and place in oven for 6 minutes.
Flip and cook another 5 minutes until light golden brown.

Jonah loved them, but wanted a "DIP" for it... so I gave him a tiny pea sized drop of honey to dip it in, and he is very happy!
