Did you forget about me? It's been awhile since I have posted any new recipes on the blog. I took a long and unexpected break to focus on family, and myself. The past 6 months have been full of surprises!
My little sisters house burnt down, My close friends husband had an affair on her while she was pregnant with their son, I suffered a miscarried, we put our house up for sale, and all of this while Simon was still recovering from his Cranial surgery. What a wild ride! My experimenting in the kitchen never ceased however, and I am currently equipped with a bunch of new recipes that are just waiting to be put up on the site.
I couldn't think of a better recipe to start things off again, than a healthy, filling granola recipe. It's super easy and makes a wonderful gift. I plan on jazzing this recipe up a little and giving it as Christmas gifts this year.
Ingredients
4 cups rolled oats (not quick cooking)
1/2 cup brown sugar
1/4 cup maple syrup
1/2 cup honey
1/2 coconut oil
2 tablespoons ground cinnamon
2 tablespoons pure vanilla extract
Preheat oven to 250 degrees, and line a large baking sheet with parchment paper.
1/2 cup or ground flaxseed
1/2 cups oat bran
1 cup slivered almonds
1 cup roughly chopped walnuts
1 cup slivered almonds

1/2 cup plain peanuts
1/2 cups whole pecans
1 cup dried blueberries
1 cup raisins
1/2 cup brown sugar
1/4 cup maple syrup
1/2 cup honey
1/2 coconut oil
2 tablespoons ground cinnamon
2 tablespoons pure vanilla extract
Preheat oven to 250 degrees, and line a large baking sheet with parchment paper.
In a very large bowl, mix the first 9 ingredients together.
In a small saucepan, heat the brown sugar, maple syrup, honey, coconut oil, cinnamon and vanilla.
Cook over medium heat, until it boils. Remove from heat immediately after you see the bubbles break the surface. Slowly pour over the nut and oat mixture, making sure to stir and coat as much as possible.
Pour onto baking sheet and bake for approximately 40 minutes.

Now, every oven in different. You will want to keep a close eye on it, while it's baking so that it doesn't burn. This is why I cook it at a low temperature. I flipped my mixture about 4 times during the 40 minutes as well.
