Healthy Buttermilk Banana Pancakes

Fluffy banana pancakes
There are few things better than eating a warm breakfast of delicious banana pancakes with your little boys on a cold winter morning.

I have been taking my time with this blog as it was only a little over a month ago that my youngest went through a major surgery. He was diagnosed at 8 weeks of age with " Sagittal Craniosynostosis" and just underwent total reconstructive surgery of his head. It was the hardest thing that my husband and I have ever had to endure. Needless to say, my cooking and baking en-devours took a back seat. So it's been a few months since I have touched this blog. Originally I had wanted to have it up for the New Year, but it's now looking like it might be a few more months.
Now the Christmas holidays are behind us and my husband returned to work today after a wonderful, and cherished 12 days off work. This morning began with both my boys staring at me wondering what I was going to feed them. Jonah requested pancakes, and it was then that this recipe was born. I love feeding him a hot breakfast because it seems to satisfy him more than his regularly requested PB&J on toast. Jonah and Simon devoured these, without maple syrup! Which really, is quite amazing. I on the other hand, added a very small dollop of syrup to mine....perfection!

Ingredients

Tip*** If you have buttermilk. Use 1 cup of it, in place of the 1% milk and vinegar)

1 cup minus 1 tablespoon of 1 % milk (or whatever you have)
1 tablespoon of white vinegar
1 cup of whole wheat flour
1/2 cup of all purpose flour
2 ripe bananas (Mashed)
1 1/2 teaspoons of baking powder
1 teaspoon of baking soda
1/4 cup of ground flax
1 egg
2 teaspoons of vanilla
2 teaspoons of melted butter
2 tablespoons of applesauce
Handful of chocolate chips (optional)
Butter for greasing pan

Preheat large frying pan or skillet.
Add the tablespoon of vinegar to a 1-cup measuring cup. Then, fill the cup to the brim with the milk. Set aside for 2 minutes. Mash the banana in a medium bowl and add the egg, vanilla, melted butter, milk mixture (which is now buttermilk), and applesauce.

Normally I am a firm believer in sifting all dry ingredients together when baking, but in this case I did not have the time. I added all the dry ingredients to a big bowl and quickly whisked them together. Then, I gently folded all the wet ingredients into the dry ingredients with a wooden spoon. 

Bake until each side is golden brown and top with your favorite syrup! They turned out beautifully.
