Let's face it, sometimes life is just way to busy to bake from scratch. Even the easiest of recipes. Just last night I realized that we were having a play date today with some visiting friends from Toronto and I mildly panicked. I was in bed, exhausted, and just didn't have the energy to go to the grocery store...actually, I think it had been over a week since I had grocery shopped! Kyle happened to need insulin, so he ran to the store to pick it up and I asked him to pick up a coffee cake, or some baking for me to offer our guests. He came home with a PC Blue Menu Banana Bread Box Mix.... The reason I am blogging about it, is that is simply AMAZING. One piece is only 3 weight watcher points, and it's perfectly moist and scrumptious. I always have over ripe bananas in the freezer so really, it's a quick an easy way to use them up.
All that I did, to jazz it up a bit for company, was make a simple topping of 1 teaspoon of cinnamon, 1 tablespoon of brown sugar, and sprinkled it on top before popping it in the oven.
So, in my opinion. Definitely worth having a few of these boxes lying around your cupboards!
