Vanilla, Coconut, Carrot Protein Cake

I am presently eating this for breakfast with a cup of rich Arabica coffee. It's very filling and very healthy!

There should be no guilt about eating this cake for breakfast. The recipe idea comes from body builder Jamie Eason's protein powder recipes. I made it using more ingredients, otherwise I felt it would taste too bland and texture-less.

A sprinkle of powdered sugar give this cake the touch of sweetness it needs!




Ingredients

1 cup of whole wheat flour
2 level scoops of vanilla protein powder
2 tsp cinnamon
1/2 tsp baking soda
1/4 tsp salt
1/4 tsp allspice
1/4 tsp nutmeg
2 table spoons of unsweetened coconut flakes
Sprinkle of raisins (optional)
4 egg whites
3/4 Cup of Splenda
2 small jars of carrots (Baby food jars)
1/3 cup of almond milk

Preheat your oven to 350.
Grease a square pan (I used olive oil spray).

Whisk all dry ingredients together in a large bowl. Then add all wet ingredients mixing after each addition. Pour into greased dish and bake for 25 minutes.

Cut into about 15 pieces this cake yields only 1 weight watchers point! Unbelievable. Such a great grab and go breakfast!
