The Best Bran Muffins in the World

This recipe is a combination of recipes that I have used in the past. It all came to be one morning when Jonah was especially hungry. Growing boys eat ALOT and I was running out of healthy options to offer him... I also had not been to the grocery store in about a week and so I had to go rummaging through my cupboards to see what I had.

This is the PERFECT bran muffin recipe. Not too sweet, very moist and not grainy....I actually had posted this with different instructions. Here is my most recent version, that works much better.

1/2 cup raisins
1 egg (1 egg re-placer)
1 cup milk
1 tablespoon of vanilla
1 1/2 cup of all bran cereal (FLAKES, not Buds. Buds won't work)
1/2 cup honey
2 small ripe bananas mashed
1 apple shredded (using a grater)
2 tablespoons melted butter
1 tablespoon cinnamon
1 teaspoon baking soda
1 cup of whole wheat flour
2 dashes of all spice

Grease muffin tins (Makes 12 large muffins)
Preheat oven to 400 degrees.
Put egg, vanilla, milk, bananas, honey, and butter in  blender. Blend for 5 seconds. Add bran flakes to blender and pulse until mixture becomes smoother.

Pour mixture into a large bowl. Add raisins and grated apple and stir. Add baking soda, all spice, cinnamon and flour. Stir with a spatula until well combined.

Fill muffins tins and bake for 30 minutes. Muffins are done when tops spring back when touched.
